Are you in the mood for some spice Latin flavor? If so, this free low calorie recipe for arroz con pollo (rice with chicken) will hit the spot!
2 teaspoons Olive Oil (Extra Virgin) 1 cup Long Grain Rice (White) 1/2 cup Yellow Onion (chopped) 1 can (14.5 ounces) Diced Tomatos 2 cup Red Pepper (sliced) 1 cup Fat Free Chicken Broth 1 clove Garlic (minced) 4 4-ounce Boneless/Skinless Chicken Breasts Halves 8 threads Saffron 1/4 teaspoon Frank's Hot Sauce 1/2 teaspoon Paprika Salt and Pepper to Taste
Cut the chicken breasts into bite-size pieces. Heat the extra virgin olive oil in a large frying pan (non-stick if available). Saute the chicken pieces for 6 to 8 minutes (until browned). Remove the chicken pieces from the frying pan to a small bowl.
Place the chopped onion and rice into the frying pan and cook for two minutes. Add tomatos, red pepper, fat free chicken broth, minced garlic, saffron, hot sauce and paprika.
Return the chicken to the pan, cover and let simmer for approximately 30 minutes (until rice is tender and the majority of chicken broth and other liquids have been absorbed)
REMEMBER: Cook chicken to an internal of 165°F (juices will run clear when cut with the tip of a knife).
